When talking to clients about choosing healthier snacks- I emphasize fiber, protein, and healthy fats. Each of the three helps to fill us up and keep us full until our next meal. Combining at least 2 of the three helps with balance.
This amazing cookie dough is free of eggs (if that concerns you when eating raw dough and batters) and is a great source of protein and fiber (from the chickpeas). It's more filling, satisfying, and nutritious than the standard cookie dough.
1 can chickpeas, drained & rinsed
2.5 Tbsp milk of your choice (could also use the liquid from the beans, called aquafaba)
2 tsp pure vanilla extract
1 heaping Tbsp of honey or maple syrup
1/2 cup chocolate chips
1. Combine all ingredients except the chocolate chips in your blender or Vitamix.
2. Scoop it into a Pyrex or Tupperware and mix in the chocolate chips. Seal and store in the fridge or freezer.
1. If you store it in the freezer, microwave for 15 seconds or let sit before serving to make it easier to scoop.
2. Try storing it in ice cube trays, to make it easy to serve in mini portions.
