When talking to clients about choosing healthier snacks- I emphasize fiber, protein, and healthy fats. Each of the three helps to fill us up and keep us full until our next meal. Combining at least 2 of the three helps with balance.
This amazing cookie dough is free of eggs (if that concerns you when eating raw dough and batters) and is a great source of protein and fiber (from the chickpeas). It's more filling, satisfying, and nutritious than the standard, sugar-loaded, empty-calorie, Betty Crocker alternative (although I do love her cookies!).
1 can chickpeas, drained & rinsed
2.5 Tbsp milk of your choice (could also use the liquid from the beans, called aquafaba)
2 tsp pure vanilla extract
1 heaping (overflowing) Tbsp of honey or maple syrup
1/2 cup chocolate chips
1. Combine all ingredients except the chocolate chips in your blender or Vitamix.
2. Scoop it into a Pyrex or Tupperware and mix in the chocolate chips. Seal and store in the fridge or freezer.
Tip: Next time I'll make this in ice cube trays and freeze. When I stored the whole container in the freezer it tasted good but was way to hard to scoop, so I kept it in the fridge this time. Keeping it in ice cube trays will help me with portion control too :)
